Have you got a recipe worthy of being crowned WA’s Signature Dish?

I am a huge fan of all events and festivals that celebrate Western Australia’s amazing local produce and food. So when Buy West Eat Best approached me to be one of four official bloggers to follow their behind-the-scene journey as they search the state for WA’s Signature Dish, I jumped at the opportunity.

If you’re an amateur cook and have a winning original recipe that best represents Western Australia, there’s just a couple of days left to enter. WA’s Signature Dish competition closes this Monday April 7 and will involve submitting a recipe with local ingredients that best represents your location (find our more / enter here). Entrants who have been selected for the cook offs in each region will be notified week of April 14 with the cooking heats starting in regional Western Australia from April 28.

Finalists from each region will have the opportunity to be mentored by some of Western Australia’s best chefs in the lead up to the grand finale on WA Day.

WA’s Signature Dish mentors for each of the regions are:

• Perth & Surrounds – Fraser’s Chris Taylor
• Great Southern – Pepper & Salt’s Silas Masih
• Southern Forests – Foragers Field Kitchen & Cooking School’s Sophie Zalokar (read my interview with Sophie here)
• Gascoyne – Incontro’s Peter Manifis

The competition was launched by Agriculture and Food Minister Ken Baston, who said Western Australian food tastes had matured from the iconic meat pie, lamington and pavlova.
“WA’s Signature Dish is a unique way to celebrate and show off the huge depth and breadth of local produce now on offer,” Mr Baston said.
“Sell-out events, such as long-table lunches and ‘gourmet escapes’ featuring WA chefs, show there’s a growing food culture in WA and a greater appreciation for fresh, locally-sourced produce.”
WA’s Signature Dish is being organised by the Department of Agriculture and Food through the Buy West Eat Best program, which promotes locally grown and produced food.

Besides being crowned WA’s signature dish, the winner will receive a two-day mentorship with Bistro Guillaume’s Guillaume Brahimi and two nights accommodation at Crown Perth.
